Instructions
Plan ahead for fish that will be eaten raw: ask your fishmonger for a gutted whiting suitable for this use. Unless a professional anti-parasite treatment is confirmed, freeze the fillets for 7 days in a home freezer at −18 °C (0 °F). The stated total time includes this home preparation and about 12 hours of thawing in the refrigerator.
Thaw the fish covered in the coldest part of the refrigerator, at 4 °C (40 °F) maximum, until no frozen core remains. Keep the fish cold and separate from other foods. Lemon does not kill parasites; freezing does not replace hygiene or keeping the fish cold. Pregnant people, young children, older adults and people with weakened immune systems should avoid this raw fish dish.
Peel the sweet potato, then weigh 140 g of flesh, cut into 2 cm cubes and cook for 15 to 20 minutes in 700 ml of boiling water, until tender. Drain, spread out and let cool for 10 minutes, then refrigerate for 20 minutes. Rinse and drain the 60 g of corn.
