Instructions
Mix the 50 g of flour, the yeast and the sugar. Add 20 g of lukewarm milk, 12 ml of lukewarm water, 0.6 g of salt and 3 g of oil. Knead for 8 minutes until you have a soft dough. Cover and let rise for 60 minutes, until clearly puffed.
Gently knock it back, shape a ball, then flatten it into a 9 cm disk on parchment paper. Cover and let it rise for 35 minutes. Preheat the oven to 190 °C (375 °F) for the last 15 minutes. Brush with the remaining 5 g of milk; bake for 16 to 18 minutes. The bun should be golden and no longer doughy in the center. Cool on a rack for 15 minutes.
While it cools, slice the onion. Cook it with 2 g of oil and 20 ml of water over medium heat for 8 to 10 minutes, until tender and lightly browned. Mix the 40 g of yogurt with the lemon juice, grated garlic, paprika and 0.2 g of salt. Slice the tomato and pat the lettuce dry.
